Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.

Method

  1. Heat the oven to 400°F. Toss the pepper halves with the oil and set cut-side up on a parchment-lined sheet pan.

  2. Stir together the rice, beans, corn, salsa, chili powder, cumin and salt. Pack it into the peppers, mounding a little.

  3. Bake 15 to 20 minutes.

Look forThe peppers soften and blister at the edges, and the filling is hot through.

  4. Finish with the lime juice and cilantro. Serve warm or at room temperature.

Make ahead

Fill up to a day ahead and chill, covered. Bake from cold, adding 5 minutes.

Holding

Allergens

None of the major allergens as written. Always check labels on packaged ingredients.

Notes

Cooked rice that has sat out can carry Bacillus cereus. Use rice that was cooled quickly and kept in the fridge, within a day or two.

Tavern Night

This dish's twist table (d6)

1–2The classic stands. No twist. Cook it as written.
3Herb swap. Swap cilantro for chopped scallion
4Acid strike. A drizzle of salsa verde instead of lime
5Plating challenge. For cheese-eaters, top half with shredded cheese before baking
6Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies.

Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
