Crispy Smashed Potatoes with Salsa Verde
Golem Stones
Boil, smash, roast. The craggy edges go glassy-crisp in a hot oven, and a sharp herb sauce does the job butter and sour cream usually do.
At the table: Best within an hour of roasting. Re-crisp 5 minutes at 450°F.

Heat the oven to 450°F. Drain the potatoes and let them steam dry in the colander 5 minutes.
Look forDry surfaces crisp; wet ones steam.
Brush a sheet pan with half the oil. Space the potatoes out and press each flat to about ½ inch with the bottom of a glass. Brush with the rest of the oil and sprinkle with the teaspoon of salt.
Roast 25 to 30 minutes without turning.
Look forDeep golden with dark, crunchy edges. Lift one: the bottom should release on its own.
Stir together everything for the salsa verde. Spoon it over the potatoes, or serve it alongside with picks.
Make ahead
Boil and smash up to a day ahead and chill on the pan, covered. Roast just before serving, adding 5 minutes. The salsa verde keeps 2 days in the fridge.
