Why nowMorning recipes in the book leaned on eggs and dairy. This one has neither.

Ingredients
As written: About 6 cups.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Heat the oven to 425°F. Toss the potatoes, pepper and onion with the oil, paprika, garlic powder and salt on a large sheet pan and spread in one layer.
Look forGive them room. Crowded potatoes steam instead of browning.
Roast 20 minutes, then stir and flip.
Look forThe undersides are golden.
Scatter the beans over the pan and roast 12 to 15 minutes more.
Look forPotatoes crisp and tender, beans hot and a little crackly.
Top with the scallions and serve with lime and hot sauce.
Make ahead
Dice the vegetables the night before and keep the potatoes in cold water in the fridge. Drain and dry them very well before roasting.
Holding
Best hot from the oven.

None of the major allergens as written. Always check labels on packaged ingredients.
Notes
Check the hot sauce label; a few contain anchovy or other additions.
Tavern Night
This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Add chopped cilantro with the scallions |
| 4 | Acid strike. Spoon salsa verde over the top |
| 5 | Plating challenge. Fried eggs on top for anyone who eats them |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
