Bread
Rosemary Olive Oil Focaccia
Shieldbread
No kneading and no mixer. Time does the work: a wet dough rises in the bowl, then again in an oiled pan, and bakes into a crisp-bottomed, airy slab.
At the table: Room temperature all session.

Why nowThe book's breads used milk, butter and egg. This one is vegan as written.

Ingredients
One batch: One 9x13-inch pan, 24 squares.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Stir the flour, yeast and salt in a large bowl. Add the water and stir until no dry flour is left.
Look forA shaggy, sticky dough. That's right.
Cover and leave at room temperature 2 hours. Every 30 minutes for the first hour, wet your hand and fold the dough over itself 4 times, turning the bowl.
Look forDoubled, bubbly and jiggly.
Pour ¼ cup of the oil into a 9x13-inch pan. Tip the dough in, turn to coat, and stretch it toward the corners. Cover and rise 45 minutes.
Look forIt fills the pan and looks puffy. If it springs back while stretching, wait 10 minutes and try again.
Heat the oven to 450°F. Drizzle with the rest of the oil, press oiled fingers all the way to the bottom of the pan to make deep dimples, and scatter the rosemary and flaky salt.
Bake 22 to 25 minutes. Cool 10 minutes in the pan, then on a rack.
Look forDeep golden on top and crisp underneath. Lift a corner to check.
Make ahead
Best the day it's baked. Wrap squares and freeze up to a month; reheat 5 minutes at 400°F.
Holding
Room temperature all session.
Allergens

Tavern Night
This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Add halved olives with the rosemary |
| 4 | Acid strike. Serve with a dish of balsamic for dipping, at the break |
| 5 | Plating challenge. Cut into long fingers for one-hand eating |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
