Endive & Radicchio Boats with Whipped Feta
Elven Leaf Boats
Bitter leaves, salty whipped feta, a sweet hit of blood orange. The filling sits at the base of the leaf, so the leaf does the work a cracker would and nothing drips.
At the table: Up to 2 hours at room temperature (it is dairy).
Not yet table-tested. This recipe is written from standard, well-known methods and has not been through our test tables yet. The badge changes when it has.

Method
Blend the feta, yogurt, olive oil, zest and honey in a food processor 1 to 2 minutes.
Look forCompletely smooth and fluffy, no curds.
Separate the leaves. Keep about 24 that are cupped and sturdy; use the small inner radicchio leaves.
Cut the peel and pith off the oranges, cut out the segments, and chop them.
Pat the orange pieces dry on a towel so they do not weep. Spoon or pipe a tablespoon of feta into the base of each leaf and top with orange and pistachios.
Just before serving, add a few flakes of salt.
Make ahead
Whipped feta keeps 3 days in the fridge. Washed leaves keep 1 day wrapped in a damp towel. Assemble within an hour of serving.
Holding

Allergens
Contains milk, tree nuts (pistachios). Always check labels on packaged ingredients.
Notes

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Add torn mint over the top |
| 4 | Acid strike. Swap blood orange for pomegranate seeds |
| 5 | Plating challenge. Serve the feta in a bowl with leaves around it as scoops |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
