Cooking at Hearth. The dish as written. Simple, honest, done well.

Why nowSplit peas need no soaking, cost very little and carry as much protein as most beans.

Ingredients
As written: About 9 cups.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Warm the oil in a large pot over medium heat. Cook the onion, leek and celery 8 minutes, until soft.
Stir in the garlic for 1 minute. Add the split peas, broth and bay leaf. Bring to a boil, then simmer partly covered for 45 to 55 minutes, stirring now and then, more often near the end.
Look forThe split peas have collapsed and the pot looks thick and creamy.
Take out the bay leaf. Add the frozen peas and simmer 3 minutes. Off the heat, add the mint and parsley and blend with a stick blender until mostly smooth.
Look forKeep the blender head under the surface so hot soup doesn't spatter.
Stir in the lemon juice, salt and pepper. Taste and add more lemon or salt as you like.
Make ahead
Keeps 4 days in the fridge and freezes 3 months. It sets thick when cold: loosen with water and reheat until steaming hot. The green dulls a little by day two.
Holding
In a slow cooker on warm, at 140°F or above, up to 3 hours. Stir in a splash of water now and then.
Allergens
None of the major allergens as written. Always check labels on packaged ingredients.
Notes
Yellow split peas work the same way; the pottage is golden instead of green.

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap the mint for tarragon or chives |
| 4 | Acid strike. A spoon of plain yogurt in each bowl |
| 5 | Plating challenge. Serve in cups with a crisp oat flatbread to dip |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
