As written: 4 bowls.

Method

  1. Rinse the mussels in a colander under cold water. Throw away any with cracked shells, and any open ones that don't close when tapped on the counter. Pull off any stringy beards, tugging toward the hinge.

Look forLive mussels smell of the sea, never fishy. Keep them cold until they go in the pot.

  2. Warm the butter and oil in a large pot with a lid over medium heat. Cook the leeks 6 minutes until soft, then the garlic and thyme for 1 minute.

  3. Turn the heat to high, add the cider and broth, and bring to a boil. Add the mussels, cover, and cook 4 to 6 minutes, shaking the pot once or twice.

Look forMost of the shells have opened wide. Throw away any that stay shut.

  4. Spoon the mussels into warm bowls, pour the broth over, and scatter with parsley. Put out a bowl for the empty shells and bread for the broth.

Make ahead

Cook just before eating. Clean the mussels up to 2 hours ahead and keep them in the fridge in a bowl covered with a damp towel, not in water.

Holding

Serve right away.

Allergens

Contains shellfish (mussels), milk (butter), wheat (bread). Always check labels on packaged ingredients.

Notes

Hard cider cooked for a few minutes keeps some of its alcohol. For kids or anyone not drinking, use the unsweetened apple cider and vinegar.

Dairy-free: use 2 tablespoons olive oil and skip the butter.

Tavern Night

This dish's twist table (d6)

1–2The classic stands. No twist. Cook it as written.
3Herb swap. A pinch of saffron in the broth
4Acid strike. A spoon of grainy mustard whisked into the broth
5Plating challenge. Serve the pot itself in the middle of the table with bread
6Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies.

Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
