Miso-Butter Charred Cabbage
Giant's Cabbage
Cabbage roasted cut-side down on a screaming-hot pan gets sweet and nutty at the edges. A smear of miso butter at the end does the rest. It costs about three dollars.
At the table: Loosely covered in a 200°F oven up to 1 hour.

Why nowCabbage is cheap, keeps for weeks and turns sweet and silky in a hot oven. At Thanksgiving it also frees the oven early.

Ingredients
As written: 8 wedges.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Put a sheet pan in the oven and heat to 450°F. Brush the wedges with oil and sprinkle with salt.
Lay the wedges cut-side down on the hot pan. Roast 15 minutes, flip, and roast 10 to 15 minutes more.
Look forEdges deep brown, almost black in spots, and a knife slides into the core.
Mash the butter, miso, maple syrup and vinegar together.
Spread the miso butter over the hot wedges and return to the oven 2 to 3 minutes. Finish with scallions and sesame.
Make ahead
Make the miso butter up to a week ahead. Roast the cabbage the same day.
Holding
Loosely covered in a 200°F oven up to 1 hour.
Allergens
Contains milk, soy, sesame. Always check labels on packaged ingredients.
Notes
Check the miso label: some (dashi-iri) contain fish stock.

| 4 | Acid strike. Finish with a squeeze of lime |
| 5 | Plating challenge. Cut into bite-size chunks and serve on picks |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
