Herb-Butter Roast Turkey Breast
The Harvest Lord's Roast
A whole turkey for eight is a lot of bird and a lot of oven. A bone-in breast, salted the day before and roasted with herb butter under the skin, is juicier and done in under two hours.
At the table: Sliced, in its pan juices, covered, in a 200°F oven up to 1 hour (keep it above 140°F).
Not yet table-tested. This recipe is written from standard, well-known methods and has not been through our test tables yet. The badge changes when it has.

Why nowHosting is up, but the gatherings are small: this is Thanksgiving for a Friendsgiving-sized table.

Ingredients
As written: One 6–7 lb breast.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
A day ahead, pat the breast dry and rub the salt and pepper all over. Refrigerate uncovered on a rack 12 to 24 hours.
Heat the oven to 325°F. Mash the butter with the herbs, zest and garlic.
Loosen the skin with your fingers and spread two-thirds of the butter underneath. Rub the rest over the skin.
Spread the onion in a roasting pan or large skillet, add the broth, and set the breast on top, skin up.
Roast 2¼ to 3 hours, and start checking at 2 hours.
Look for160°F in the thickest part, not touching bone. If the skin is pale, finish at 425°F for 10 minutes.
Tent with foil and rest 20 minutes.
Look forThe temperature climbs to 165°F as it rests. Check; if it has not, return it to the oven for 10 minutes.
Slice off the bone and spoon the strained pan juices over the slices.
Make ahead
Salt it 1 to 2 days ahead; that is most of the work. Leftovers keep 4 days in the fridge.

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap the sage for rosemary |
| 4 | Acid strike. Swap the lemon zest for orange zest |
| 5 | Plating challenge. Slice and serve on milk bread rolls as sliders |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
