Why nowBeans are moving to the center of the plate this winter, and this is the easiest way to put them on a game table.

Ingredients
As written: About 4 cups.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Heat the oven to 400°F. Roll the chickpeas in a clean towel until very dry, and pick off any loose skins.
Look forDry chickpeas are crisp chickpeas. Wet ones steam.
Toss the chickpeas with 1 tablespoon of the oil and the salt on a sheet pan. Roast 20 minutes.
Add the almonds, shake the pan, and roast 6 to 8 minutes more.
Look forChickpeas rattle when you shake the pan and a cooled one cracks between your teeth. Almonds smell toasty.
Whisk the soy sauce, sugar and remaining oil. Pour over the hot pan, toss, and roast 3 to 4 minutes to set the glaze.
Look forWatch closely. Sugar goes from glossy to burnt quickly.
Toss with the furikake while still warm. Cool completely on the pan; they crisp as they cool. Portion into small cups.
Make ahead
Airtight at room temperature up to 3 days. If they soften, re-crisp 5 minutes at 350°F.
Holding
Room temperature all session.

Tavern Night
This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap furikake for everything-bagel seasoning |
| 4 | Acid strike. A squeeze of lime over the cups at the table |
| 5 | Plating challenge. Serve in a paper cone per player |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
