Chili Crisp Deviled Eggs
Dragon Eggs
Classic deviled eggs with chili crisp beaten into the yolks and a few crunchy bits on top. Eggs are cheap again, and nothing disappears faster from a party table.
At the table: Up to 2 hours at room temperature, or longer with the platter set over a tray of ice.

Why nowChili crisp turns the most classic party bite into something new, with crunch and a little heat.

Ingredients
As written: 24 halves.
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Bring an inch of water to a boil in a pot with a steamer basket. Add the eggs, cover, and steam 12 minutes.
Move the eggs to a bowl of ice water for 15 minutes.
Look forSteamed eggs peel far more easily than boiled ones.
Peel and halve the eggs. Pop the yolks into a bowl.
Mash the yolks with the mayonnaise, mustard, vinegar, salt and chili crisp until smooth.
Look forNo lumps. A fork works; a food processor makes it silky.
Pipe or spoon the filling into the whites. Top each with a few crunchy bits of chili crisp and some scallion.
Make ahead
Steam and peel the eggs up to 2 days ahead. Make the filling a day ahead and keep it in a piping bag. Fill within 2 hours of serving.
Holding
Up to 2 hours at room temperature, or longer with the platter set over a tray of ice.
Allergens
Contains egg, soy (most chili crisp), mustard, sesame (some chili crisp). Always check labels on packaged ingredients.
Notes
Not tagged card-safe: chili oil finds fingers. Keep napkins close.
Check the chili crisp label: a few brands contain shrimp or fish.
Tavern Night
This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap scallion for chives or cilantro |
| 4 | Acid strike. A drop of black vinegar on each |
| 5 | Plating challenge. Serve the filling in a bowl with the whites alongside, build-your-own |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
