Look for165°F in the thickest piece, with browned edges.
Meanwhile, melt the butter in a saucepan over medium heat, add the garam masala and chili powder for 30 seconds, then the tomato sauce, sugar and salt. Simmer 8 to 10 minutes, then stir in the cream and simmer 2 minutes more.
Look forThick enough to hold a line when you drag a spoon through it.
Toss the chicken with half the sauce. Set the naan on two sheet pans, spread with the rest of the sauce, and top with the mozzarella, chicken and onion.
Bake 8 to 10 minutes.
Look forCheese bubbling and the naan edges crisp.
Scatter with cilantro and cut each naan into 6 strips.

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap cilantro for fresh mint |
| 4 | Acid strike. Finish with a squeeze of lime and quick-pickled onion |
| 5 | Plating challenge. Cut into one-bite squares and serve on picks |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
