Buldak-Style Baked Wings

Crit-Fail Wings

Fire chicken, baked instead of fried. These are honestly not card-safe. They are called crit-fail wings for a reason: serve them at the break, away from the game, with wipes.

Fire sauce

To finish

Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.

Method

  1. Heat the oven to 250°F with a rack in the upper-middle. Set a wire rack in a foil-lined sheet pan.

  2. Pat the wings very dry, then toss with the baking powder and salt. Arrange on the rack without touching.

  3. Bake 30 minutes. Raise the oven to 425°F and bake 40 to 50 minutes more.

Look forThe skin is crisp, blistered and deep golden, and the thickest wing reads at least 165°F (175°F or higher eats best). The low first stage renders the fat.

  4. Meanwhile, warm the garlic in the oil 30 seconds, add the remaining sauce ingredients and simmer 1 to 2 minutes.

  5. Toss the hot wings in the sauce. Finish with sesame seeds and lime.

Make ahead

Make the sauce up to a week ahead.

Holding

Tavern Night

This dish's twist table (d6)

1–2The classic stands. No twist. Cook it as written.
3Herb swap. Toss with chopped cilantro and scallion
4Acid strike. Serve with a cooling yogurt-lime dip
5Plating challenge. Serve boneless: same sauce on baked chicken thigh chunks, on picks
6Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies.

Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
