Why nowTwo crowd favorites in one: lasagna's layers with Buffalo chicken's heat, baked in a muffin tin so everyone gets the crispy edges.

Ingredients
One batch: 12 cups.
Method
Heat the oven to 375°F and spray a 12-cup muffin tin.
Toss the chicken with the hot sauce and butter. In another bowl, mix the ricotta, cream cheese, egg, blue cheese and celery.
Press a wonton wrapper into each cup. Layer 1 tablespoon ricotta mixture, a heaping tablespoon of chicken and 1 tablespoon mozzarella.
Add a second wrapper turned 45 degrees and repeat the layers.
Bake 18 to 22 minutes.
Look forThe wrapper edges are golden, the cheese bubbles, and the center reads 165°F.
Cool 5 to 10 minutes in the tin before lifting out; they set as they cool. Finish with more blue cheese.
Make ahead
Mix both fillings up to a day ahead and chill. Assemble in the tin within an hour of baking so the wrappers stay crisp.
Holding
A 200°F oven up to 1 hour, or room temperature up to 2 hours.
Allergens

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap celery for chopped scallions |
| 4 | Acid strike. Drizzle with ranch instead of blue cheese |
| 5 | Plating challenge. Bake in a mini muffin tin with one wrapper each, for one-bite stacks |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
