Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Strip the leaves off the stems and tear them into bite-size pieces. Wash them in a big bowl of cold water and lift them out.
Warm the oil in a large pot over medium heat. Cook the onion 5 minutes, then the garlic for 1 minute.
Add the greens by the handful with the salt, tossing until they wilt. Pour in the broth, cover, and simmer 8 to 10 minutes for kale or 4 minutes for chard.
Look forTender and dark green, with a little broth left in the pot.
Stir in the vinegar and nutmeg. Taste for salt.
Make ahead

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. A handful of chopped dill at the end |
| 4 | Acid strike. Lemon instead of vinegar |
| 5 | Plating challenge. Top with a soft-boiled egg for a whole supper |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
