Filling

To roll

Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.

Method

  1. Heat the oven to 425°F. Toss the sweet potato with the oil, chili powder, cumin and salt on a parchment-lined sheet pan. Roast 20 minutes.

Look forTender all the way through and browned at the edges.

  2. Tip the potato into a bowl with the beans and mash roughly with a fork. Stir in the corn, lime juice and cilantro.

Look forThick and spreadable, with some whole beans left.

  3. Wrap the tortillas in a damp towel and microwave 45 to 60 seconds.

Look forSoft and floppy. Cold tortillas crack when you roll them.

  4. Spread 2 tablespoons of filling along one edge of each tortilla and roll up tightly. Set seam-side down on the lined pan, close together.

  5. Brush with the oil and bake 15 to 20 minutes. Serve with salsa.

Look forCrisp, blistered and golden at the ends.

Allergens

Contains check corn tortillas for wheat (most are wheat-free). Always check labels on packaged ingredients.

Notes

Tavern Night

This dish's twist table (d6)

1–2The classic stands. No twist. Cook it as written.
3Herb swap. Add chopped pickled jalapeño to the filling
4Acid strike. Serve with lime wedges and salsa verde
5Plating challenge. Cut in half on the bias and stand them in a cup
6Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies.

Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
