Pot
Black Bean & Street-Corn Chili
Bandit Camp Chili
A meatless chili that eats like a meaty one. Charring the corn first, and mashing one can of beans, gives it body and a smoky street-corn finish.
At the table: Low on the stove or warm in a slow cooker up to 4 hours, at 140°F or above. Stir in broth as it thickens.

Topping bar
Kosher salt means Diamond Crystal. With Morton kosher salt, use about half.
Method
Heat 1 tablespoon oil in a 12-inch skillet (or the Dutch oven, in two batches) over high heat. Add the corn in a single layer and leave it alone 3 to 4 minutes, then stir and cook 2 minutes more. Scoop it out.
Look forCharred brown spots on a lot of the kernels.
In the Dutch oven over medium heat, add the remaining oil, onion, poblanos and jalapeño and cook 7 minutes. Stir in the garlic, spices and tomato paste for 2 minutes.
Mash one can of the black beans in a bowl. Add all the beans, tomatoes, broth and salt to the pot.
Simmer, partly covered, 30 minutes, stirring now and then.
Look forThick enough that a spoon dragged across the bottom leaves a trail.
Stir in most of the charred corn and the lime juice. Save the rest of the corn for the topping bar.

This dish's twist table (d6)
| 1–2 | The classic stands. No twist. Cook it as written. |
|---|---|
| 3 | Herb swap. Swap cilantro for scallions and pickled jalapeño |
| 4 | Acid strike. Finish with a splash of the pickled-jalapeño brine |
| 5 | Plating challenge. Serve in mugs, or over tortilla chips as a break-time nacho tray |
| 6 | Host's boon. The Host picks any twist above, or the table invents one. The safety rule still applies. |
Roll before you start cooking. No twist ever changes a time, a temperature or how done something must be.
